The cut piece of beetroot in hot water leads to the plasma membrane leakage and this results in the release of pigment in water which makes the watercolour. If in case, the beetroot piece is placed in cold water plasma membrane does not leak as the temperature is not enough and hence pigments are not released out and the watercolour doesn't change.
