Oxidation state of N in N2O5 = +5
Oxidation state of N in N2O3 = +3
In N2O5, nitrogen is present in highest oxidation state of +5. The oxide of an element in its highest oxidation state tend to be the least stable and most strongly acidic. Hence, N2O5 is more acidic than N2O3.
