  1. The hydrochloric acid in our stomach dissolves bits of food and creates an acidic medium. In this acidic medium, the enzyme pepsinogen is converted to pepsin, a protein-digesting enzyme.
  2. It also kills many bacteria and other microorganisms that enter along with the food.
  3. It creates an acidic environment and activates the digestive enzyme pepsin.
