  • Fermentation is the process in which a substance breaks down into a simpler substance.
  • Fermentation refers to the metabolic process by which organic molecules ( mainly carbohydrates, such as starch or sugar) are converted into acids, gases, or alcohol in the absence of oxygen or any electron transport chain.
  • The formation of curd from milk is an example of fermentation. The Lactobacilli convert lactose to lactic acid. This reduces the pH and results in the separation of milk proteins from the milk and the yoghurt is formed.
