Process of coagulation of milk proteins occurs due to lactic acid.
The lactobacilli are the bacteria carrying out the fermentation of the milk. In this process, the lactose sugar in the milk is converted into lactic acid. This lactic acid separates the protein part from the non-protein part. This process is called coagulation.
